Interesting post.
My immediate thought was the EBV some how intervening in the fats pathways to somehow moderate conditions to its own advantage.
Interestingly there is one trial on NCBI which suggest the long chain Omega 3s inhibited EBV activation. I have not had time to more than skin bits of the trial you link to but see the MMPs are involved. DHA inhibits MMP (9? from memory). See the Greek diet thread and latest thread suggesting infection plays a role as an initiator of a significant number of cases of cancer.
