Thanks, RB! I might be a nerd, too, because I've just spent a great deal of time reading all of these links. I found the mineral depletion one of particular interest. My "hobbies" include nutrition and gardening, and although my knowledge of both cannot be called vast, my knowledge of nutrition and gardening techniques are definitely half-vast.
