Have we heard anymore on the Great Muffin Controversy? Is flaxseed good for us or not? I would still like a flaxseed muffin recipe if anyone out there has one to share. There are a few flax muffin recipes on Diana Dyers website (she is a registered dietician who is a 3 time cancer survivor...2 times breast cancer and all of the dieticians in THIS area stongly recommend her diet, book and website...I do it faithfully).

My oncs office has an R.D. who works with cancer patients. I attended one of her seminars and she gave us a wonderful recipe for Bran Flax Muffins. Here goes:
Bob's Bran Flax Muffins:
1 cup all purpose flour
1/2 cup whole wheat flour
3/4 cup ground flax seed
1/4 oat cup bran
3/4 cup packed brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon powder
1 1/2 cup finely shredded carrots
2 peeled and shredded apples
1/2 cup raisin (or cransins)
1 cup chopped nuts (I use walnuts)
3/4 cup milk
2 beaten eggs
1 tsp vanilla
2 tbsp canola oil
mix together flour, flax meal, oat bran, brown sugar, baking soda, baking
powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisin and nuts. Combine milk, eggs, vanilla and oil and mix well.
Stir liquid ingredients, into dry ingredients, stir until ingredients are moistened.
Do not over mix.
Fill muffin cups 3/4 full and bake at 350 F for 15 to 20 minutes. Yield: 24 small muffins.
(Note: you can double recipe and keep muffins in the freezer)
Enjoy.
I did speak to Tin Rin about being er+ and flaxseed. She said that I needed to be very careful.

Thanks, Ladies! Karen, what do you think your friend meant by "be very careful"? Would even one of the flaxseed muffins not be okay? I am anxious to try the muffin recipes, and also some of the other great-sounding recipes on the website. Tricia

I think a muffin a day would probably be ok, however, I would talk to my doctor before I take anything with estrogen in it. I am going to have a wrap up session (august 9th) with Tin Rin now that I have completed chemo. She is going to help me with radiation and Herceptin ( what will be good for me to eat and what supplements to take during these treatments). I am going to talk to her more about being er+ and flaxseed. I will be happy to share with you what I find out.

Dear Karen, Is flaxseed considered estrogen? I really am trying to learn all I can about everything to do with this her2neu+++, er+. pr+ type of cancer. I would be most interested in what your nurse friend has to say when you ask her about diet and flaxseed. Please post it for all of us. Thank you so much for your help! Tricia

I thought it was a form of estrogen, but maybe I am wrong. I remember asking Tin Rin the day of the seminar, and I am almost sure she said, " a little bit is ok, but you need to be careful when you are er+". I just posted a question on the, Ask the experts, at the Johns Hopkins site, so we'll see what, the nurse there has to say. Also, once I have my meeting with Tin Rin, ( Aug. 9) I will post all the information I receive form her on this site. I am also going to ask her about Oleic Acid. Have you heard about Her2+ women using this?

i have seen a lot about Oleic Acid or Olive Oil, but have not seen how much should be injested. I would be interested to find out the amount recommended.

I would doublecheck any info you get on the Hopkins ask an expert site. The onco nurse who answers has given me incorrect info in the past.

I understood one should take the oils in uncooked liquid form,
as cold pressed, flax or olive, to get the most benefit.
So I'm now confused with the muffin study.

Dear Ladies,
I really don't think 1 or 2 or even 3 muffins will kill you!
We could say the same about eating blue berries, rasberries and other fruits high in antioxidents while taking chemo, all these things are very good for you and it's only when you suppliment these with high-potency anti-oxidents that they may becomes too much of a good thing.
Let's not get paroniod or we'll die of stress related illnesses long before the cancer will get us.
Also, I don't think that any one of these individual items will either help us harm us when taken in moderation (moderation being the key). What makes all of these things effective is the sum of all the parts.
There are some noteable exceptions such as curcumin + certain chemos which has documented proof of negative interaction.
Let's not forget about Quality of Life!
