In this article from the John Hopkins university the various causes & treatments of anemia including diet factors are presented.

Notice the following remark concerning the possible false normal Ferritin test result for iron in this extract :

Iron deficiency produces reduced MCH, MCV, and reduced Hgb. In iron deficiency, the serum iron level and ferritin level are low. The total iron binding capacity is elevated, and the percent saturation is low (<20%). Ferritin is an acute-phase reactant and may be falsely normal in patients with cancer. Thus, the transfer iron saturation level of <20% may be used as an alternative measure of iron deficiency.
