Healthy AND Very Yummy Muffin Recipe to Share

Perfect 10 Power Muffins

Step 1: Mix together the following dry ingredients:

1 1 /2 c. whole wheat flour
3/4 c. ground flax seed
3/4 c. Oat bran hot cereal
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon

Step 2: Mix together the following wet ingredients:

1 1/2 c. grated carrots
1 c. unsweetened applesauce
1/2 c. any of the following: raisins, golden raisins, craisins, dried
cranberries
1 c. chopped walnuts or pecans
3/4 c. milk
2 eggs, slightly beaten
1 tsp. vanilla

Combine dry and wet ingredients, mix until moistened. Fill greased muffin tins approximately 3/4 full (I fill mine almost to the top). Bake 350 degrees for 30 - 33 min. (jumbo) or 20-22 minutes (regular). Test for doneness using toothpick.

My biggest problem with really good muffins (and these sound great) is that I eat them! I would make pumpkin/cranberry muffins with 20 grams each flaxseed and then instead of eating the one a day, would have two, and I confess, on occasion, three. I now put the flaxseed in my daily oatmeal--not so great but not so fattening either. But I will probably try this one as it does sound heavenly!

I can never remember if I am suppose to stay away from the flax seed oil, flax seed or both because I am er/pr+.

The muffins sound great!

I made the muffins from your recipe this week. It took me two days, but it is well worth it. (The recipe isn't hard, I am just slow!) The muffins are really good. They are so dense that I don't think anyone could eat very many at a time. In fact my husband and I slice them like small loaves of bread---I used large muffin cups and filled them to the top. They do not rise--at least mine didn't--but they are really delicious and just taste healthy! My husband loves them and said they are like a rather dense carrot cake. I will probably use more walnuts and raisins, maybe dates, too, next time. I usually have a hard time eating any breakfast, but one of these--or even half--are a perfect breakfast, perhaps with a small apple and some rice milk. Thanks, Marejo! Hugs, Tricia
