Good, healthy and super EASY recipes
 
As I have been reading all the great ideas for salads in the thread posted by Amy ("Salad Suggestions) I thought how wonderful it would be if a bunch of us could contribute just ONE wonderful recipe that is good, super healthy and (importantly) super easy (a lot of us have full or part-time jobs)- in or out of our homes. Of course, there is nothing stopping us from contributing more.

If we could get each person to contribute a main dish or side dish that is heathy and good for us (and easy) in sufficient detail that we all can actually make it, we would end up with our own HER2Support.org cookbook!!!

Please contribute one recipe that fits the bill in detail- so we all can make on our own. I promise to jump in but do not have sufficient self-efficacy in cooking to be the first !!! We can eventually incorporate the information from other threads (salads as one example) and end up with one place with all cookbook entries. One-pot or slow cooker recipes would be particularly welcome for folks who work outside the house ! Ditto with great soup recipes and foods from different cultures !

I've been working on a presentation and have spent a lot of time looking at the AICR Test Kitchen recipes. Lots of good ones!!

This is probably too simple, but it is something I really enjoy:

Sliced colorful red/green/yellow peppers
Sliced onion
Sliced mushrooms
lime or lemon juice (optional)

sauteed in a small amount of olive oil

I do add some salt. Originally I had it at a Mexican restaurant, where they offered a bit of sour cream on the side, which made nice contrast with the lemon/lime juice.

I also tried gazpacho (a cold soup) last year and was quite happy about how many easily accessible and colorful veggies are in it, with olive oil (another plus). There are many recipes online for it.

Some serve avocado or sour cream alongside for contrast as well, although I like it without. Instead I prefer using a lot of lime or lemon in mine.

It was so easy to keep a batch of it constantly around as a nice way to stay hydrated and at the same time deal with appetite surges. It is great for anyone who wonders what to do with excess tomatos from the summer garden.

I was reading one of the other posts about olive oil increasing the effect of Herceptin, and wondered if maybe it is the other way around!
